Are we afraid of delivering what students 'want'?

I’m putting together the rough chapters of a book matching my experiences of startups with those of education. What’s fascinating is that most start out in that tech push model, thinking they can change the consumer or user into doing things THEIR way. When they turn the telescope around and start looking at the pulls from the market to which their tech is an answer it’s an epiphany.
However, there’s a great resistance to changing education towards what the kids would like it to be – somehow we, the push-meisters, know better and young people will have to change their behaviour to suit. And the education institution believes this is 100% the right way, the way things should be.
To question it is tough, but probably the focus of a discussion we should be having."
